Prova a installare php-mbstring per la configurazione di mediawiki.
già aggiunto dopo il primo tentativo di repository Universe:Pacchetto php7.2-mbstring mancante in Ubuntu 18.04

Risposta accettata:
Ti mancano alcuni canali necessari da sources.list . Esegui sudo gedit /etc/apt/sources.list e fallo sembrare così:
deb http://archive.ubuntu.com/ubuntu bionic main multiverse restricted universe
deb http://archive.ubuntu.com/ubuntu bionic-security main multiverse restricted universe
deb http://archive.ubuntu.com/ubuntu bionic-updates main multiverse restricted universe
Salva ed esci.
Quindi aggiorna il tuo repository:
sudo apt update
Quindi installa php-mbstring :
sudo apt install php7.2-mbstring
